A yeshivish shiur is English sentences full of Hebrew and Aramaic, said in Ashkenazi havara. Kol Kesav is a Torah transcriber built for exactly that: the Gemara’s words stay the Gemara’s words, and “Shabbos” stays Shabbos.
You choose how the loshon kodesh comes out: in Hebrew letters inside the English, or transliterated the way a bochur would write it (Shabbos, Tosafos, Brachos). When the maggid shiur speaks Yiddish, it is written in Yiddish.

When the shiur is in Yiddish, it is written in Yiddish with Hebrew letters, and the loshon kodesh words keep their normal spelling.
The sources the maggid shiur mentions, a Gemara, a Rashi, a Tosafos, a Rambam, are gathered into a Mareh Mekomos list, grouped by topic.
Leave out the questions and comments from talmidim and keep the maggid shiur’s words.
Turns the transcript into a written piece, as if the maggid shiur wrote it up himself. Nothing is added.
